my decision making process of what to bake was nothing but thorough. i wanted to stick with something that was in line with the season, so what is better then pumpkin?! in my efforts to become a world famous baker and taking advantage of the amish in me, i decided pumpkin whoopie pies perfect!!
the baking process was anything but perfect. i made the filling a day ahead of time and i am so glad that i did that. at the time of formulating the recipe/searching on martha stewart.com i wasn't aware that i had to sift the powdered sugar. since i don't have a sifter i had to improvise and use a 3 inch strainer. sifting 3 cups of powdered sugar = 1 hour of no fun. once the frosting debacle was over and done with it was smooth sailing from there.
overall i think they turned out great. there may be a few tweaks that i need to make but all in all i think this will become a staple of my fall recipe repertoire!
